The folks down at Hays Co BBQ are slinging some serious barbecue about 30 minutes south of Austin in the city of San Marcos (aka San Marvelous). You can find everything, plus the kitchen sink at Hays Co. The building itself can house half of Texas, but that is because they offer 12 different meats on their regular menu. That requires a lot of space! The "must have" item on this menu is the jalapeño cheddar sausage ring (or any of their rings honestly). Get it with a side of green chili mac-n-cheese.
They also frequently have special like pork belly that is ON POINT and not to be missed. Finish it off with an order of banana pudding or a slice of pie!
